Watermelon Soup with Ginger & Mint

Watermelon Soup

4    cups watermelon chunks and juice — seeded

2    tablespoons fresh lemon juice

2    tablespoons fresh mint — chopped

1    tablespoon sugar

1/3  cup white wine — optional

1 ½  inch ginger root — sliced 1/8″ thick

fresh mint — for garnish

 

In a blender, blend all ingredients except the ginger.  Add the ginger slices and chill the soup several hours.  Remove the ginger slices.  Serve the soup garnish with mint sprigs.
