Mardi Gras Shrimp

For our Mardi Gras dinner this year I made my version of Cajun Shrimp.  This is a quick and easy dish, I hope you enjoy it.

Serves 4

1 pound jumbo raw shrimp, shells off

2 tablespoon avocado oil, divided

1 tablespoon unsalted butter

2 tablespoons Cajun seasoning

In a large bowl combine 1 tablespoon avocado oil and the Cajun seasoning, add shrimp and evenly coat.

Heat a large saute pan over medium high heat, when pan is hot add the remaining tablespoon avocado oil and the butter.  When the butter is melted add the shrimp and cook  approximately 2 minutes per side.

Serving ideas: want to keep this Cajun you could serve with grits? I served with rice and  sauteed asparagus.
