Super Bowl Sunday Sliders!

Super Bowl Sunday is more than just the game, it is also about the food, and maybe the commercials!

 Who doesn’t like bite size burgers?!  Below is a variety for you to try.  Maybe you can even come up with a new version of your own.  I like to use a variety of rolls, try mini-Kaiser rolls or dinner rolls.  Don’t be afraid to try different toppings too!  How about sliced, sautéed onions and mushrooms, shredded carrots, different cheese, spinach leaves, the list goes on and on!  You can cook these sliders on an outdoor grill, a table top grill (like a George Forman), or in a grill pan on top of the stove.

Turkey

Serving Size: 4    

Ingredients

1 package ground turkey (1.25 pounds)

6 button mushrooms, chopped

1 tablespoon Worcestershire sauce

1 tablespoon low-sodium soy sauce

1 tablespoon Mrs. Dash Original Chicken Grilling Blends or seasonings of choice

Salt and pepper, to taste

2 pieces string cheese, cut each into 4 pieces (total 8 pieces), optional

Mix ground turkey, mushrooms, sauces and seasonings in medium bowl.  Form 8 patties.  If using cheese: In center of patties place 1 piece of string cheese, form patty to hide the cheese.

On a medium-hot grill, cook the burgers for 5-6 minutes per side, or until no longer pink.

If using a George Forman type of grill, cut the cooking time in half.

 Serve on bun with topping of choice.  Some ideas: sliced, cooked mushrooms, onions, pickles, lettuce, ketchup, mustard, and/or pickle relish.

 

Pork

Serves: 4

Ingredients

1 pound ground pork

½ apple, cored, shredded*

1 tablespoon Worcestershire sauce

1 tablespoon low-sodium soy sauce

1 teaspoon dried rosemary, crushed

Salt and pepper, to taste

Mix all ingredients in the bowl.  Form into 8 small patties.

On a medium-hot grill, cook the burgers for 5-6 minutes per side, or until no longer pink.

If using a George Forman type of grill, cut the cooking time in half.

Serve on bun, with apple-slaw and condiments of choice.

*Apple-slaw:  Grate the remaining half of apple; mix with 1 ½ cups broccoli slaw mix.  Toss with dressing of choice, we like to use a lemon-ginger-sesame vinaigrette.

 

Chicken

Serves: 4

Ingredients

2 chicken breasts (could use thighs if you like!)

1 tablespoon canola oil

2 tablespoons seasonings (the boys like McCormick’s Savory Blend)

2 slice Swiss cheese, cut into fourths

Place one chicken breast between two sheets of plastic wrap, pound with the mallet until ¼ inch thick throughout.  Cut into 4 similar size pieces.  Repeat with remaining chicken breast.

Place the chicken pieces on a large plate and drizzle oil over top.  Sprinkle with seasoning, spreading to cover all pieces.

On a medium-hot grill, cook the chicken pieces for 2-3 minutes per side, or until no longer pink.

If using a George Forman type of grill, these thin pieces will only take 2-3 minutes to cook.

Serve on a sesame seed bun with lettuce, tomato, and condiments of choice.

 

Tuna

Serves: 4

Ingredients

2 large or 4 small tuna steaks

1 tablespoon canola oil

Salt and pepper to taste

1 tablespoon toasted sesame seeds

Cut tuna steaks into 4 similar size pieces.  Place on large plate, coat with canola oil.  Sprinkle with salt and pepper.

On a medium-hot grill, cook the tuna burgers for 3-4 minutes per side.  If using a George Forman type of grill, cut the cooking time in half.

Remove from heat and sprinkle with sesame seeds.

Serve on a whole-wheat sesame bun, if you can stand the heat use wasabi mayo*, top with broccoli-slaw.

*Mix 1 teaspoon wasabi powder with a little water to make a paste.  Mix the paste with ¼-½ cup low-fat mayo.

 

Beef

Serves: 4

Ingredients

1 pound ground beef

½ onion, diced – optional

Salt and pepper, to taste

2 slices cheddar cheese

Mix all ingredients, except cheese in bowl.  Shape into 8 patties.

On a medium-hot grill, cook the burgers for 5-6 minutes per side, or until no longer pink.  If using a George Forman type of grill, cut the cooking time in half.

Cut each cheese slice into 4 pieces.  Approximately 1 minute before you take sliders off of grill top with cheese slices and let cheese melt.  If using a George Forman type grill, top with cheese after removing from grill and serve.

Serve on bun of choice,  make this an All-American – tomato, lettuce, and condiments!
